Pumpkin Recipe: Pumpkin Spice Oatmeal Pecan Cookies

I was happily surprised when my roommate made some delicious and healthy cookies for the fall season! As you might know, I am a sucker for healthy pumpkin recipes. Anything with canned pumpkin or pumpkin pie spice, sign me up! These are a guilt-free creation that will only cost you 165 calories for two cookies!

Pumpkin Spice Oatmeal Pecan Cookies

  • 1 cup all purpose flour
  • 2 cups quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 2 tbsp unsalted butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup unpacked brown sugar
  • 1 large egg
  • 6 tbsp canned pumpkin (not pumpkin pie filling)
  • 2 tsp vanilla extract
  • 3/4 cup chopped pecans
  • 3/4 cup white chocolate chips (optional)

Mix all dry ingredients together in a medium bowl.

In a large bowl cream the butter and sugars together. Once creamed, add the egg, pumpkin and vanilla.

Add the dry ingredients to the wet ones and drop 1 tablespoon of the dough to baking sheets.

Bake for 10-12 minutes at 350 degrees.

Healthy Pumpkin Pie

It finally feels like fall has hit Gainesville!!
